Recipes: A Dollop of Peanut Butter
American Pancakes with Peanut Butter (pictured above)
Ingredients135g plain flour
1 tsp baking powder
2 tbsp caster sugar
130ml milk
1 egg
2 tbsp melted butter
Pinch of salt
2 tbsp Whole Earth crunchy peanut butter
2 tbsp raspberry jam
Handful of fresh raspberries
Method
Use a sieve to sift flour, salt, sugar and baking powder into a large mixing bowl. In a separate bowl, crack the egg and whisk together with the milk. Slowly add the melted butter into the mixture and continue to whisk
Combine both the flour and the egg mixture into one bowl and whisk together until it forms a batter
Grease a pan with butter and heat on the hob. Use a ladle to measure out the batter and spoon into the frying pan. When the pancake begins to form bubbles on the top, flip and cook on the other side. Cook the pancake for a few minutes on the hob until it turns golden brown
Repeat the process until you have used all of the mixture
To serve, add a generous dollop of Whole Earth peanut butter and jam and garnish with fresh raspberries
Peanut Butter Pancakes
Ingredients
3 Cups Almond Flour
1 tbsp Ground Flaxseed
1/2 tsp Sea Salt
1/2 tsp Baking Powder
3 Eggs
3/4 Cup Almond Milk
2 tbsp of Butter
To Serve
Maple Syrup
Fresh Fruit
Smooth Whole Earth Peanut Butter
(makes up to four large pancakes)
Method
Mix together the flour, flaxseed, salt and baking powder in a bowl.
In another bowl add the eggs and whisk, then add the milk and butter. Whisk together.
Slowly add the flour mixture to the eggs mixture, whisking as you go, to create the pancake batter. If the mixture looks dry at this point add a dash of milk and keeping adding until you have reached the desired consistency.
Lightly oil a pan and place on the heat. Add desired amount of pancake batter to the pan and cook for 3 minutes. Flip your pancake and cook for another 3 minutes until it's golden brown. Remove from the pan and repeat to make more pancakes.
To serve, add a dollop of your favourite peanut butter and top with chopped fruit of your choice and a drizzle of maple syrup.
