Wing Yip’s Tangy Thai Beef Salad (pictured above)

Serves 2

Ingredients:
228g good quality steak
114g mixed salad leaves
2 tomatoes (cut each into 6 wedges)
1/6th cucumber (sliced)
28g Rice Vermicelli (soaked in hot water)

For the dressing:
1 tbsp. fish sauce
2 birds eye chillies (finely sliced)
3 tbsp. lime juice
1 tsp finely chopped garlic
1 tsp finely chopped ginger
Small handful chopped fresh coriander
Small handful chopped mint
1 heaped tbsp. shallots (finely dice)

Method:
1. Mix all the dressing ingredients together in a glass bowl.
2. Drain vermicelli and allow to cool.
3. Mix leaves with vermicelli and divide between two plates.
4. Scatter cucumber and tomato over the leaves.
5. Cook steak on a very hot grill pan – cook to your preference but medium rare is recommended.
6. Allow steak to rest and then slice finely, across the grain.
7. Add steak to glass bowl with dressing ingredients and mix well.
8. Serve on salad leaves.


Devilishly delicious coconut braised pumpkin with chilli, lime and ginger

Serve with stir fried Chinese vegetables or steamed rice.

Ingredients:
2 cloves of garlic – chopped
1 onion – finely chopped
1 medium pumpkin peeled and deseeded – cut into 8
2 tins/800ml of Mai Siam coconut milk
1 tsp dried chilli flakes
1 tsp coriander seeds
1 lemon grass
1 tbsp grated ginger
1 lime – zested and juiced
1 red chilli – sliced thinly
½ bunch coriander – chopped

Method:
1. Pre heat oven to 180°C
2. In a casserole dish with a little oil fry off the garlic and onion then add the pumpkin.
3. Cover the pumpkin with coconut milk and add chilli flakes and coriander seeds. Add the lemon grass, ginger and ½ of the lime juice. Cover and bake in the oven for 20 minutes until tender (longer if needed)
4. Once cooked, to serve, sprinkle sliced chilli, lime zest and coriander over the braised pumpkin.
