Recipes you'll love, just in time for Wimbledon

Wimbledon is synonymous with stawberries and cream.

Even if you are not one of the lucky ones munching berries on centre court, you can still get in the British summer spirit with these delicious recipes. Why not start your day with fluffy vanilla cream pancakes, and finish with a tennis-themed tipple?

Easy, seasonal and scrumptious, these recipes are winners - game, set and match!

Strawberries, Raspberries & Vanilla Cream Pancakes

Indulgent yet light, these pancakes can be whipped up in no time.

Makes 4 servings

Ingredients
250g plain white flour
2 eggs
1 pint whole milk
½ tsp Nielsen Massey Vanilla Extract
50g butter
300ml whipping cream
Strawberries, raspberries, blueberries or seasonal fruit of your choice
Silver Spoon icing sugar for dusting

Method
Sieve the flour into a bowl and whisk together with the eggs.

Slowly whisk in the milk making sure you disperse any lumps.

Heat a little lard in a large frying pan and tip to cover the whole surface, when sizzling, add a ladle of pancake mix, move the pan so the mix covers the whole surface.

Cook for a minute on one side and then flip or turn over with a palette knife and brown on the other side.

Remove from the pan onto a plate and place a square of greaseproof on top, repeat until all the mixture has been used.

Whip the cream and add Nielsen-Massey vanilla extract.

Chop strawberries, raspberries or blueberries into desired sizes.

Choose a pancake  add a generous spoon of cream plus a generous hand full of fruit and fold in half.

Dust with icing sugar and enjoy!

The Wimbledon Martini

Made with fresh strawberries shaken with Pampero Blanco rum and amaretto topped with a layer of double cream and amaretto biscuits – this is a wonderfully sweet cocktail with a hint of fresh almonds and a dash lime to balance the fruity flavours.

Makes 1 serving

Ingredients
4 Strawberries                     
40ml Pampero Blanco              
15ml Amaretto                          
10ml Lime juice                           
10ml Gomme                              
To garnish:
Double cream
Amaretto biscuits

Method
Muddle strawberries. Add the Pamero Blanco, amaretto, lime juice and gomme.

Shake and fine strain into a martini glass. Layer double cream thinly over the top and garnish with crumbled amaretto biscuits.
