Christmas cocktails 2016
Makes 3
Ingredients
• 6 raspberries
• 3 tsp Chambord
• 3 scoops Waitrose 1 Limoncello Italian Gelato
• Prosecco to top up
• Frozen redcurrants or berries to garnish
Recipe
1. Put 2 raspberries in the bottom of 3 martini glasses and squash with the back of a spoon.
2. Stir 1 tsp Chambord into each.
3. Add a scoop of gelato to each glass and top up with Prosecco.
4. Garnish with redcurrants or berries.
Winter Rum Cup
This spiced rum and cider punch makes an ideal winter warmer
Serves 10-12
Ingredients
• 2L apple cider
• 2 apples, one cubed, one sliced
• 1 orange, sliced
• 2cm piece fresh ginger, peeled
• 2 star anise
• 2 cinnamon sticks
• 70cl Santa Teresa Gran Reserva Rum
• Ground cinnamon to garnish
Recipe
1. Heat the cider in a saucepan with the apple cubes, orange, ginger, star anise and cinnamon sticks.
2. Remove from the heat, add the rum.
3. Strain. Garnish with apple slices and ground cinnamon.
Mulled Sherry
Rich with spice and orange, this is a lovely alternative to mulled wine.
Serves 10-12
Ingredients
• 75cl Waitrose Solera Jerezana Dry Palo Cortado Lustau
• 40ml The King's Ginger Liquor
• 4 dried figs
• 3 cloves
• 4 tsp runny honey
• Zest of 1 orange
• 1 cinnamon stick
• 1 whole nutmeg, grated
• 1 orange, to garnish
Method
1. Gently heat all the ingredients in a saucepan until hot, but not boiling
2. Strain into a punch bowl or jug and garnish with orange peel or slices of orange.
Cranberry Gin Fizz
The perfect centrepiece for your Christmas celebration
Serves 10-12
Ingredients
• 250ml Martin Miller's Gin
• 2 sprigs fresh thyme
• 500ml cranberry juice
• 2 tbsp fresh orange juice
• 1L tonic water
• Fresh cranberries, to garnish
Method
1. Pour the gin into a bowl
2. Add the thyme and muddle to bruise the leaves and release their flavour
3. Remove the thyme leaves with a slotted spoon and discard
4. Add the cranberry and orange juices to the gin, then stir in the tonic water
5. Pour into a punch bowl or a jug filled with ice.
6. Garnish with lots of fresh cranberries.
Presenter Jeremy Vine's White Chocolate Toddy
Makes 2
Ingredients
• 330ml milk
• 50g chopped white chocolate
• 50ml Malibu
• Grated white chocolate
• Toasted coconut flakes
Method
1. Heat milk in a pan until simmering.
2. Remove from the heat and add the chopped white chocolate.
3. Stir until the chocolate has melted and put back on the heat to warm through.
4. Add the Malibu and pour into a heatproof glass.
5. Garnish with the grated white chocolate and toasted coconut flakes.
Susie Barrie's Christmas Bellini
Makes 4
Ingredients
• 2 chilled tinned peach halves
• 2 clementines
• 25ml sugar syrup
• 2 drops orange blossom water
• Prosecco
Method
1. Chope the peach halves and puree in a blender.
2. Stir in the chilled juice of 2 clementines, sugar syrup and orange blossom water.
3. Pour into flutes and top up with chilled prosecco.
4. Stir.
