Top Tips for a Gluten-less Christmas
Waitrose nutritionist, Nicola Selwood, says "Every Christmas I receive requests from customers wanting a gluten free turkey to serve their guests. But turkeys don't contain gluten, I hear you say! And they don't, but many are stuffed and it's the stuffing that often contains breadcrumbs."
Make your own breadcrumbs and stuffing
Claire Lanza, Head Chef at Waitrose Cookery School, Salisbury says "If you have any leftover gluten free bread in the coming weeks, rather than throw it away, why not blitz up the bread now to make breadcrumbs and keep in the freezer ready to make bread sauce."
Substitute crackers with oatcakes
Eleni Tzirki, Head Chef Manager Waitrose Cookery School, King's Cross says "Don't miss out on crackers with cheese. Oatcakes also make a great canape for New Year's Eve with goats cheese and a red onion chutney."
Using ready-made roast potatoes? Check the coating
Waitrose nutritionist, Nicola Selwood, says "My favourite side dish, roast potatoes, often contain wheat flour in the coating so always check the ingredients if you are buying readymade ones. Any ingredient containing gluten will be highlighted in bold, along with other allergens, in the ingredients declaration on pack."
Don't forget about the drinks
Waitrose nutritionist, Nicola Selwood, says "Most beers, lagers and ales contain gluten but wine and spirits are naturally gluten free. If you plan to serve beer or lager, then opt for a gluten free one, like Celia Premium Czech Lager."
