Recipes: Cream Cheese Delights

Who knew cream cheese had so many uses? This tasty spread is perfect for breakfast, lunch or dinner!

Smashed Avocado & Turkey Quesadillas (pictured above)

For a simple yet tasty light lunch or snack, it's hard to beat these delicious quesadillas, filled with The Laughing Cow Extra Light, mashed avocado and shredded turkey.
Serves 2
Preparation time: 5 minutes

Ingredients:
2 soft flour tortillas
8 triangles of The Laughing Cow Extra Light
1 ripe avocado, pitted and peeled
6 cherry tomatoes, finely chopped
60g cooked turkey or chicken, torn into shreds
A little finely sliced red onion
A few finely chopped chives
Freshly ground black pepper

Method:
Lay the tortillas on a work surface and spread 2 triangles of The Laughing Cow Extra Light over half the surface of each one.

Mash the avocado with a fork and spread it over the cream cheese. Scatter the tomatoes, turkey or chicken, red onion and chives on top.

Add dollops of the remaining The Laughing Cow Extra Light, season with black pepper, then fold in half.

Heat a chargrill pan or large frying pan. Cook the quesadillas for 1-2 minutes on each side. Cut in half and serve.

TIP: For a vegetarian version, simply replace the turkey or chicken with peppers.

Rocket, Fig & Pomegranate Crispbreads

These crunchy, characterful multi-grain crispbreads taste fantastic spread with The Laughing Cow Extra Light and topped with a few rocket leaves, sliced fresh fig and a sprinkling of pomegranate seeds. Yum!
Serves 2
Preparation time: 5 minutes

Ingredients:
8 triangles of The Laughing Cow Extra Light
4 multi-grain crispbreads
Handful of rocket or mixed salad leaves
2 figs, sliced into thin wedges
50g pomegranate seeds

Method:
Spread 2 portions of The Laughing Cow Extra Light Cheese onto each crispbread.

Sprinkle a few rocket leaves or mixed salad leaves on top of each crispbread and arrange a few slices of fig on top. Finish them off with a scattering of pomegranate seeds.

TIP: Swap the fig for thin slices of fresh mango for a refreshing twist!

Peach & Parma Ham Bruschetta

For a quick and easy snack or light lunch, tuck in to this tasty little number, made with toasted sourdough bread spread with The Laughing Cow Extra Light and topped with cranberry sauce, sliced fresh peach and Parma ham.
Serves 2
Preparation time: 5 minutes

Ingredients:
2 slices of sourdough or ciabatta bread
4 triangles of The Laughing Cow Extra Light
4 tsp cranberry sauce
1 peach or nectarine, pitted and sliced
4 slices Parma ham
Freshly ground black pepper
Basil leaves, to garnish

Method:
Preheat a chargrill pan or grill. Chargrill or toast the slices of sourdough or ciabatta.

Spread each slice with 2 triangles of The Laughing Cow Extra Light and add 2 teaspoons of cranberry sauce to each one.

Arrange the slices of peach or nectarine and Parma ham on top and season with a little freshly ground black pepper. Serve, scattered with a few basil leaves.

TIP: Substitute the cranberry sauce for a chutney if you prefer.

 


Carrot & Sultana Drop Scones

These mini pancakes are quick to make, and SO delicious! Served topped with The Laughing Cow Extra Light and a drizzle of honey, they're perfect for brunch or a guilt-free treat.
Serves 4 (makes 16 drop scones)
Preparation time: 12 minutes

Ingredients:
150g wholemeal self-raising flour
Pinch of salt
2 medium eggs
½ tsp vanilla extract
1 tbsp caster sugar
4 tbsp Greek yogurt (we used 0% fat)
150ml milk
150g grated carrot (weighed when grated)
100g sultanas
Few drops of vegetable oil
8 triangles of The Laughing Cow Extra Light
Clear honey, for drizzling

Method:
Add the flour, salt, eggs, vanilla extract, sugar, yogurt and milk into a large mixing bowl and use a whisk to beat the mixture together for a few seconds until smooth. Stir in the grated carrot and sultanas.

Heat a few drops of vegetable oil in a large frying pan and add large spoonfuls of the batter, cooking over a medium-low heat for 1-2 minutes until bubbles appear on the surface. Flip over to cook the other sides for a further 1-2 minutes. Cook in batches until all the batter is used up.

Serve the drop scones, spread with The Laughing Cow Extra Light and drizzled with a little clear honey.

TIP: These drop scones are a perfect treat to cook for hungry kids - they can even give you a hand making them!
