Crunchy Korean salad (pictured above)

100g mixed red and yellow peppers and raw red onion.
20g Spinach
20g mushrooms
20g chopped cashews
5g Chopped Coriander
50g Beansprouts
50g cooked mixed three grain Rice (wild, red and brown rice)
50g Shredded Carrot
2g Sesame Wasabi mix
50g Korean dressing
Method
Toss all ingredients together and drizzle with the dressing. Top with beef or prawns for an extra protein fill.
Supergrain salad
Filling, packed with texture and flavour and a great one heading into spring. 475 cals, only 3.7g sat fat and low n sugar with just 4.2g. Delicious topped with grilled chicken or feta cheese.
60g cooked Black Quinoa (30g raw black quinoa)
50g cooked Peas
90g cooked Freekeh
5g Spring Onions
30g Green Cabbage
5g chopped Flat Parsley
20g Baby Spinach
50g diced Avocado
2g Pumpkin Seeds
1g Chia Seeds
8g Pomegranate Seeds
35g Lemon and olive oil Dressing
Method
Toss together all the ingredients aside from the avocado, dressing and pomegranate seeds and place in a deep bowl.
To serve scatter the avocado and pomegranate seeds on top of the salad and drizzle with the lemon and olive oil dressing.
No seasoning needed! Top with your protein of choice for an extra fill. We recommend grilled chicken or feta cheese.
